Mojito Popsicles (Keep Recipe)

 

~ Mojito Popsicles ~
*Ingredients: Makes 6 - 8 popsicles
- 1/4 cup light rum (Or more???)😁
- 1½ cups fresh lime juice (about 8–10 limes)
- 1 cup water
- ½ cup granulated sugar
- ¼ cup fresh mint leaves, plus extra for optional garnish
- Popsicle molds and sticks
*Directions:
1. Make Mint Simple Syrup (or you may purchase)
In a small saucepan, combine 1 cup water, ½ cup sugar, and mint leaves.
Bring to a simmer over medium heat, stirring until sugar dissolves.
Remove from heat and let steep for 15 minutes.
Strain out the mint and cool.
2. Mix the Base
In a pitcher, whisk together cooled mint syrup, 1½ cups lime juice, and rum.
3. Fill & Freeze
Pour the mixture into popsicle molds, leaving a small headspace.
Insert sticks and freeze for 6–8 hours or until solid.
4. Unmold & Serve
Run the molds under warm water for 5–10 seconds to release.
Optional garnish with a mint leaf on each pop.
